Why we roast
Most coffee is roasted by algorithm. Ours is roasted by fire, ear, and fifteen years of burned fingertips. We buy from fourteen partner farms we can name, roast in twelve-kilo batches over Oregon white oak, and cup every lot the morning after.

Field manual
Medium-coarse, like raw sugar. 22 g of beans, ground just before the kettle sings.
50 g of 94° water, poured in circles. Watch the bed swell and exhale its CO₂.
Spiral outward, then back in, in two slow waves until the scale reads 350 g.
Drawdown should land near 3:30. Let it cool two minutes — the fruit arrives as it does.
